Easter Salad Ingredients

  • 1 small broccoli, cut into florets
  • 100g sugar snap peas, trimmed
  • 2/3 cup fresh or frozen peas
  • 1/2 telegraph cucumber, cut into large cubes
  • 1 avocado, diced
  • 150g tub mixed salad sprout combo*
  • 1/4 cup finely chopped flat-leaf parsley leaves
  • 1/4 cup finely chopped mint leaves
  • Juice of 2 lemons
  • 100ml olive oil
  • 3tbs of mixed salad seeds* (such as sunflower, sesame and pepita)
  • 100g feta, crumbled

The step by step preparation of making Easter salad is given below.

The as a matter of first importance step is to gather all the crisp vegetables specified previously. Whiten the broccoli in bubbling water for 2-3 minutes and later heat up the solidified peas or new peas in the bubbling water for 1-2 minutes. Deplete the water and separate the vegetables. Gather the whitened vegetables in a vast bowl and cut fine bits of cucumber, avocado, sprouts, parsley and mint. Include the juice and oil in the bowl and whisk them till they blend well. Season and prepare the plate of mixed greens with serving of mixed greens seeds. Top it disintegrated feta.
